This Dutch Oven Pot Roast transforms an inexpensive cut of meat into a delicious comfort food dinner. For an easy one-pot meal, slowly bake the beef with potatoes and carrots. Your whole family will love this classic Sunday pot roast recipe!.

Ingredients:
  • 3-4 lb beef chuck roast
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 3 celery stalks, chopped
  • 3 carrots, peeled and chopped
  • 2 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 lb small potatoes, washed and quartered
  • 2 cups baby carrots
  • 1 cup frozen peas
Instructions:
  1. Getting started, we are first going to preheat the oven to 325 degrees Fahrenheit.
  2. Next, take the meat and season both sides of the beef chuck roast with salt and pepper.
  3. Afterwards, heat up the vegetable oil in the Dutch oven over medium-high heat.
  4. Now we are getting somewhere - sear the beef chuck roast on both sides for 3-4 minutes per side until brown. Set the beef aside after removing it from the Dutch oven.
  5. Don't worry, nearly ready! Combine the chopped onions, garlic, celery, and carrots. Sauté the vegetables for 5-7 minutes, or until tender.
  6. Add the beef broth, red wine, bay leaves, dried thyme, and dried rosemary to the Dutch oven. Stir to combine.
  7. Return the beef chuck roast to the Dutch oven and spoon the sauce over the top of the meat.
  8. Cover the Dutch oven with a lid and transfer it to the preheated oven.
  9. Bake the pot roast in the oven for 2-3 hours, or until the meat is tender and falls apart easily.
  10. Remove the Dutch oven from the oven and add the quartered potatoes, baby carrots, and frozen peas. Stir the vegetables into the sauce, then return the Dutch oven to the oven.
  11. Bake the pot roast for an additional 30-45 minutes, or until the vegetables are tender.
  12. Remove the Dutch oven from the oven and let it sit for a few minutes before serving.
  13. Using a slotted spoon, transfer the pot roast and vegetables to a serving platter.
  14. Spoon some of the sauce over the meat and vegetables, and serve the rest on the side.
